Ingredients

3-4 people
  • 1/4 cuptoor Dal
  • 1 small size onion
  • 1/2 cupmix veggies like potato, carrot, gourd, drumstick etc
  • 1 tspor more Salt
  • 1/4 tspTurmeric
  • 1 tspChilli powder (adjust quantity)
  • As RequiredMarble to lemon size Tamerind pureed
  • 1 small tomato chopped
  • Forpaste
  • 1/2 cupor a little less grinded/grated fresh coconut
  • 2-3 tbspoil (coconut oil is preferred)
  • 2-3 pinchesasafoetida
  • 5 pcsgarlic
  • 4-5Kashmiri red chillies
  • 1/2 tspcoriander seeds
  • 1/4 tspmethi seeds
  • 1/2 tspcumin seeds
  • 1/2 tspchanadal
  • 15-20curry leaves
  • Small bunch coriander leaves
  • 2 tbspsambhar powder
  • For tampering
  • 1-2 tbspoil
  • 1/2 tspmustard seeds
  • 1-2red chillies
  • Few curry leaves
  • 1 heaped tsp mild chilli powder
  • 2-3green chillies slitted

    Boil tuverdal(almost 1/4 cup) along with chopped onions(1 small). Prepare the veggies. Roughly grind coconut.

    Add mixed vegetables(1/2 cup), turmeric(1/4 tsp), salt(1 tsp), chili powder(1 heaped tsp), and some HOT water to boil toor Dal. Boil on slow heat till the veggies are tender. Add tamarind and boil.

    For paste heat up oil, add Chana Dal, cumin, methi, coriander seeds, red chilies asafoetida, curry leaves, garlic, and all. Fry a bit and then add grinded coconut(1/2 cup). Fry for 2-3 minutes. Add sambhar powder(1 tbsp) and turn off the stove.

    Make smooth paste using some water required for grinding once it cools down.

    Add the paste into boiling sambhar along with one chopped tomato and the Kashmiri red chili powder. The paste makes it very pale. The paste will make the sambhar quite thick. You will need to add some HOT water to it. You can also add a little jaggery if you like. Adjust seasoning. If it doesn't taste sour enough, add a bit of lemon juice. Boil on slow heat till the tomatoes are cooked and you get the right consistency.

    Meanwhile, prepare the tampering by adding mustard, red chilies curry leaves, and some very mild chili powder to the hot coconut oil. Add it to the boiling sambhar.

    Simmer for about 5 min. Turn off the stove. And enjoy with idli or dhosa.
