I made this for myself and my daughter, as we both suffer from allergies. Boxed cake mixes often contain eggs or dairy products, so I don't want to use them. This is something we can eat with peace of mind. The only thing to worry about is eating too much.

I recommend using healthy oils such as canola and safflower! Be sure to check on the cake while baking to make sure it doesn't burn. If it seems like the top is going to burn, loosely cover with a piece of aluminuim foil. Recipe by Haruuraran

Steps

Mix together the ☆ and ★ ingredients separately. Once they've been mixed well, add the ★ mixture to the ☆ mixture and gently combine.

Grease a cake tin with a thin layer of oil and pour in the mixture from Step 1. Bake in the oven for 25 minutes. Once the 25 minutes is up, turn off the oven and leave the cake sit in the oven for another 10 minutes. Then remove the cake from the oven.
