Ingredients

30-45 min
4-6 servings
  1. 8flour tortillas
  2. 1 (10 oz)can Old El Paso red enchilada sauce
  3. 1 (16 oz)can refried beans
  4. 1 (8 oz)can tomato sauce
  5. 2 cupbag of shredded cheese
  6. 1 lbground beef
  7. Lawry's seasoning salt
  8. Onion powder
  9. Garlic powder

Cooking Instructions

30-45 min
  1. 1

    Preheat oven to 425 degrees

  2. 2

Place ground beef in a skillet and season with Lawry's, onion powder, and garlic powder. Brown on Medium-high heat.

  3. 3

Empty beans into microwavable bowl and heat for 1 minute 30 seconds. Remove and smush/ stir.

  4. 4

Turn on your griddle and lightly toast your tortillas on medium/high heat. *This prevents a gummy texture in the end.

  5. 5

Lay out the 8 tortillas for assembly. Equally divide all refried beans between the 8 tortillas, and spread the beans vertically in a line.

  6. 6

Drain your brown beef, and equally divide onto each tortilla. Spread meat out evenly over your beans.

  7. 7

Start at one side of your tortilla and completely roll it up. Place all 8 rolled enchiladas into a 13"x9" casserole dish.

  8. 8

Combine enchilada sauce and tomato sauce into a bowl and whisk to mix. Evenly distribute over tortillas. Make sure to let the sauce get in between the tortillas.

  9. 9

Bake for exactly 15 minutes in the oven. Remove and evenly distribute cheese on top of enchiladas. It will take the entire 2 cup bag.

  10. 10

Return to oven for 5 minutes; remove and serve!

A little about me....I grew up learning only American dishes (Fried chicken, mashed potatoes etc); upon marrying a Hispanic man... I soon found out I needed to learn many dishes I'd never heard of before! Together we have a very large and hungry family, so I went to work! After much research and practice.. I learned (and am still learning) much accepted tweaked recipes that have the full stamp of approval from the true connoisseurs of authentic Mexican Food. Enjoy!
