Cold Soba Noodles with Soy Milk Sauce

I won a contest to become a tester for a brand of mentsuyu, so I tried making this. There's soy milk miso soup, so I thought that soy milk soba dipping sauce should work too - and it was delicious! I thought I'd try milk first, but that has a character that doesn't really go well with this. I think that soy milk just goes better with Japanese ingredients. I don't have special bamboo plates for cold soba, so I just used a sushi rolling mat under the soba noodles and used tea cups as dipping cups... I apologize for the makeshift arrangement.

Ingredients

2 servings
  1. 2servings Soba noodles
  2. 100 mlMentsuyu (2x concentrate) - I used bonito based
  3. 100 mlSoy milk
  4. 1toasted white sesame seeds, finely chopped green onion, grated ginger, shichimi spice, etc. Toppings of your choice

Cooking Instructions

    Combine the mentsuyu and soy milk, and chill in the refrigerator while you prepare the other ingredients.

    Prepare your preferred herb garnish.

    Cook the soba noodles following package directions, rinse in cold water and drain.

  4. 4

    Transfer the noodles to serving plates. Serve the dipping sauce in a separate small container and the garnish on the side.
