Ingredients

Soy Sauce 2 cups (360grams) - Kikkoman
Vinegar 1 1/3 cups (168grams) - Brown Rice Vinegar
Sugar 1 1/2 cups (302 grams) - granulated. (1 cup sugar revision)
2 cupsWater
Half Portions
1 cup (180 grams)soy sauce
2/3 cupBrown Rice Vinegar (84 grams)
1/2 cupsugar
1 cupwater

Steps

Boil the soy sauce, the sugar and most of the water in a pot until boiling. Once it has boiled, mix with the vinegar and rest of the water. Cool down completely.

Prepare any vegetables. Parboil any spinach or cherry tomatoes (10sec). Pour liquid over vegetables and let ferment for one day.
