Refreshing Ramps and Natto Shira-ae

I had lots of ramps, so I came up with a no-fail, refreshing dish.

It's better to prepare the ramps when using in dishes such as this.
You don't have to drain the tofu, but if you use it as-is, you'll have to use more seasonings because the moisture will weaken the flavours.

Ingredients

4 servings
  1. 3bunches Ramps (or alpine leek)
  2. 1 blockTofu (I use silken)
  3. 1pack Natto (I use crushed natto)
  4. 1Ponzu
  5. 1Bonito flakes / white sesame seeds

    Prepare the ramps. For details, see.

    Boil the prepared ramps in salt water for 1-2 minutes.

    Drain them in a sieve, and quickly rinse them under running water. (Don't soak them, just rinse.)

    Squeeze out the water, and roughly cut into 2 cm pieces.

  5. 5

    Put the drained tofu, natto, ramps, bonito flakes, sesame seeds and ponzu in a bowl, and mix roughly with a spoon to finish.
