I harvest lots of ramps every year, so I came up with a recipe in which my child could enjoy them.

Mushrooms cook through easily, so if you are using fewer mushrooms than ramps, add the mushrooms to the pan 2-3 minutes after the ramps.

Ingredients

3 servings
  1. 4bunches Ramps (or alpine leek)
  2. 1Mushrooms (Shimeji, maitake, etc.)
  3. 2 tspConsommé granules
  4. 5 gramsButter
  5. 1Vegetable oil
  6. 1Salt and pepper

Cooking Instructions

    Wash the ramps well, squeeze them out, then slice the large stalks in half.

    Heat some oil in a frying pan, and stir-fry the mushrooms and ramps. Season with salt and pepper.

  3. 3

    Look at the stalks rather than the leaves to decide when they are done. Even if you use a lot, they will reduce greatly in size, just like in the photo.

    Turn the heat to low, and add the consommé granules and butter. Quickly stir-fry everything together, and it's done.
