I didn’t have wide rice noodles, thin rice vermicelli, or large Chinese broccoli, so I substituted with what I had. I just really wanted to make and eat Pad See Ew! It turned out delicious. 😊

Marinate the pork with soy sauce, oyster sauce, sesame oil, black pepper, and cornstarch. Let it sit for a while. Prepare the noodles, blanched Chinese broccoli, minced garlic, and seasonings.

Heat a pan and add oil. Sauté the garlic, then add the pork and cook until done. Add the soaked rice noodles and seasonings, and stir-fry.

Stir everything together, then add the Chinese broccoli and stir-fry until the noodles are cooked to your liking. Add an egg and continue stir-frying.

Once done, transfer to a plate and serve hot.
