Daifuku is a popular traditional Japanese sweet; it is soft mochi stuffed with sweet sesame and red bean paste. Mochi is a Japanese rice cake made from glutinous rice, water, sugar, and cornstarch. There are many varieties of Daifuku. They usually come with the same soft and chewy mochi with different stuffing inside.
It’s actually easy to make with only a few ingredients.

Wash and take the green stalks off the strawberries. Roll sesame paste into ball size about 40 g. Then flat your sesame paste down and place strawberry in the middle. Cover strawberry with the sesame paste, form them into dome shape. Keep in the fridge.

Add corn starch into small saucepan and cook them on low heat for 5-6 min. This method will make corn starch lighter when you coat it on your Daifuku.

Making mochi, add glutinous rice flour, corn starch, sugar and water in a saucepan and mix them up roughly, turn heat on medium heat then stir quickly until all the mixture combine and form into dough.

Let it cool down a little then roll them out into small ball size around 50 g each. Add some corn starch dust when knead your dough to prevent it stick in your hand.

Once roll out all your dough, take your strawberry and sesame paste filling out from the fridge.

Dust your chopping board rolling pin with corn starch, roll out your mochi into about 0.5 cm thick. Add your strawberry and sesame paste ball in the middle and cover them evenly with the mochi.

Cut them half to reveal the strawberry inside before serve 🍓. Serve with green tea or any kind of tea you prefer.
