Doodhi Muthiya is a Gujarati dish and is a very popular evening snack item. This is a very healthy snack item as it comprises of bottle gourd as main component and can be prepared by using very less oil. Let's have a look at the ingredients and recipe step by step

Firstly in a big bowl add - grated bottle gourd, wheat flour and besan

Now add semolina, salt and turmeric powder.

Now add cumin seeds, red chili powder and carom seeds
- 4
Now add baking soda, oil and grated ginger and chopped green chillies.

Now add chopped coriander leaves and mix well then add half a lemon this will activate baking soda. Mix everything well to form a loose dough.

Meanwhile grease a strainer with oil on which we will be placing our Muthiyas and pour some water in steamer for steaming Muthiyas

Now grease your hands and take ball sized portions from dough and start making cylindrical Muthiyas and place them on greased strainer.

Now place the strainer on steamer and let all the Muthiyas cook in low to medium flame for 20-25 mins. After 25 mins Check Muthiyas by inserting knife if batter is not sticking Muthiyas are cooked.

Take out the streamed Muthiyas on jali and allow it to cool down

Now cut small pieces and keep it ready for frying

For frying Muthiyas heat oil in a kadhai and add Mustard seeds, cumin seeds, asafoetida and white til

Now add Muthiyas and mix well

Fry for sometime untill Muthiyas become slightly brown on both sides. Add some coriander leaves from above

Tasty Muthiyas are ready to serve. Serve it with coriander chutney or tomato ketchup
