Methi Malai Aloo

Chop Methi Leaves from its stems, wash them properly & chop them finely.

Chop Green Chillies, Onions & Tomatoes very finely.

Chop Boiled Aloo in medium-small size pieces.

Now take a bowl, add finely chopped Methi leaves in it with 1 Cup Dahi, 1 Teaspoon Salt, 1 Teaspoon Laal Mirch Powder, 1 Teaspoon Kashmiri Laal Mirch Powder, 2 Teaspoon Dhaniya Powder, 1/2 Teaspoon Haldi Powder, 1 Teaspoon Anardana Powder or 1 Teaspoon Amchoor Powder in it & mix them properly.

Then take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.

When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit.

After some time, again turn on the gas & keep it on medium flame.

Then add 1 Teaspoon Jeera, 1 Teaspoon Coriander Seeds & 1 Pinch Hing in it & let them sizzle.

When they start sizzling, add finely chopped onions & green chillies in it with 1 Table Spoon Ginger Paste & cook them till they turn into golden brown in colour.

After 4-5 minutes, when they turn into golden brown in colour, add finely chopped tomatoes in it & cook them till they start releasing oil.

After 5-6 minutes, when oil is completely released, add chopped Methi leaves with dahi & spices mixed in it & mix them properly.

Now cook them for 10-15 minutes so that all spices, dahi & methi gets roasted properly.

After 10-15 minutes, add chopped aloo pieces in it with 1 Teaspoon Garam Masala & mix them properly.

Now cover the lid & again cook them for 5-7 minutes.

After 5-7 minutes, open the lid & stir them properly.

Your Methi Malai Aloo is ready to be served.
