Vegan Baked Crispy Cauliflower

This is my vegan version of my crispy cauli cauliflower, as no egg is used. You may think that using bran flakes is a little strange, but I love the stronger nutty flavour as it holds up against the sauce once it's added, plus they go super crispy once baked. I've used a Korean BBQ spicy style sauce to dress these along with spring onions and sesame seeds, but you can choose whatever dressing you fancy. BBQ and buffalo dressings work equally as well, it's even amazing snaffled as is, straight from the baking tray!

Vegan Baked Crispy Cauliflower

Preheat your oven to 200 (fan). Take the cornflakes and crush them into fine crumbs using a mortar and pestle or by placing in a bag then smashing with a rolling pin. Set aside.

Add the wholemeal flour and water into a large bowl and season well with salt and white pepper. Mix until a smooth slurry is made.

Cut the head of cauliflower into bite sized chunks then dredge them first in the flour slurry mixture then into the crushed branflakes until lightly covered all over.

Line a large baking tray with foil and place the coated cauliflower on then spray with a little oil. Bake at 200 (fan) for 30 mins, turning halfway through, until nice and crispy.

Place the cooked cauliflower into a bowl and add whatever sauce you desire to coat them and toss about until evenly covered. Serve up and enjoy whilst warm! Great served alone or with a dip on the side. :)
