Sausage Casserole

A hearty delicious zesty Casserole, with sumac - if you don’t have sumac just the juice and the zest of a lemon and a good sprinkling of freshly ground black pepper will do! I served mine with creamy mashed potatoes!

I’m using Carlin Peas in the recipe you can use chickpeas or another bean if you like!

Until Tuesday I hadn’t even heard of Carlin peas! I was gifted them at my Wirksworth farmers market to try from the Grumpy Farmers Goats Cheese! Apparently they were used as a staple ingredient here until the Elizabethan times before potatoes arrived to our shores!

I am really pleasantly surprised they are so so tasty, have a lovely flavour and hold on to the sauce so well! Full of vitamin B1 too! A recipe from the north of England uses them as a snack with vinegar! I made them this way too they are so so moorish!

Ingredients

4 servings
  • 12sausages
  • 200 gramsCarlin Peas or chickpeas (cooked)
  • 1onion diced
  • 3 clovesgarlic roughly chopped
  • 1 tinchopped tomatoes
  • 1 tbspsumac or the rind and juice of a lemon and 1 tsp of freshly ground black pepper
  • 1pepper diced
  • 1 stickcelery sliced
  • 300 mlhot stock
  • 3 tbspmascarpone or sour cream
  • 2bay leaves and a sprig of Rosemary
  • Salt and Pepper to taste

    In a large pan fry off the sausages until golden brown, meanwhile in another pan fry the onions and garlic, add the celery and tinned tomatoes! Simmer well.

    Next add the other ingredients and spices add the pepper and sausages! Once it’s all simmering really well add the peas or beans! Leave to simmer and thicken for another 15 - 20 minutes! Add a dollop of the mascarpone stir well and serve !! Enjoy
