Chole bhature is a food dish originating from northern India. However, in India, Delhi Chole Bhature is very popular, it is a combination of chana masala and bhatura/Puri, a fried bread made from maida. The origin of dish lies in Eastern Uttar Pradesh. The dish is also very popular in Pakistan as a breakfast meal.
I have made it without onion and garlic .

Ingredients

4 serving
  1. FOR PRESSURE COOKING:
  2. 1 cupchana / chickpea
  3. 2 tsptea /2 tea bag
  4. 1 inchcinnamon / dalchini
  5. 1bay leaf / tej patta
  6. 3 podscardamom / elachi
  7. 3 podscardamom / elachi
  8. 4 cloves/ lavang
  9. 1/4 tspbaking soda
  10. 1/2 tspsalt
  11. 3 cupwater
  12. for curry
  13. 2 cuptomato (roughly chopped)
  14. 5-6green chilli (slit)
  15. 1 cupghee
  16. as per tasteSalt
  17. 1/4 tbspturmeric
  18. 1/4 tspaamchur / dry mango powder
  19. 1 tspkasuri methi / dry fenugreek leaves
  20. as requiredChole masala(I have used catch chole masala)
  21. 1/4 cupginger (julienne)
  22. 1/4 tspkashmiri red chilli powder
  23. for tempering
  24. 1 tspcoriander seeds
  25. pinchhing / asafoetida
  26. 1/2 tspcumin / jeera
  27. 1 tspred chilli powder

Steps

    In a cooker add overnight soaked chole and add 3 cups of water.

  2. 2

    In a cloth put tea and all the whole spices, put a knot on it and leave it in the cooker so that chole absorbs all the black color of tea,which is required.

    Put it on flame for 30 minutes.

  4. 4

    After that transfer it to a iron wok which wil increase its black color and taste.

  5. 5

    Now add ginger, green chillies and tomatoes.

  6. 6

    Now add salt, red chilli powder, turmeric powder and chole masala.

  7. 7

    Mix it well and let it cook on low flame for 20-30mins.

  8. 8

    Now, add ghee and give it a nice mix..

  9. 9

    Make a tempering /tadka
    Take another pan add mustard oil in it.

  10. 10

    Let it heat, now add jeera, coriander seeds, and asafoetida.

    Now add red chilli powder and pour it over pindi chole.

    Your chole is almost ready.

    Now add some panner cubes if you want.

    And some coriander leaves

    Serve it with bhatura/naan/poori.

    Accompanied with some fried masala aalo and boondi raita.
