Ingredients

1 1/2 hours
6 servings
  1. 1 1/2 cupsall-purpose flour (about 180 grams)
  2. 1/4 cupcocoa powder (about 20 grams)
  3. 1/2 teaspoonbaking soda
  4. 1/4 teaspoonsalt
  5. 1/2 cupsoftened unsalted butter (about 115 grams)
  6. 1/3 cupbrown sugar (about 75 grams)
  7. 1/3 cupgranulated sugar (about 75 grams)
  8. 1large egg
  9. 1/2 teaspoonvanilla extract
  10. 2/3 cupchocolate chips (about 120 grams)
  11. 2 teaspoonsred food coloring, optional, for a red velvet effect
  12. Add almonds or cashews if you like

Cooking Instructions

1 1/2 hours
  1. 1

Place the softened butter in a mixing bowl and beat until slightly fluffy. Add both types of sugar and beat together for about 3-4 minutes. We used a hand mixer; if using a whisk, it might take a bit longer.

  2. 2

Add the egg and vanilla extract. If using food coloring, add it now. Beat until combined. If you want a deeper color, add more after mixing the egg with the previous ingredients.

  3. 3

Add the flour, cocoa powder, baking soda, and salt. Use a spatula to mix until no flour lumps remain.

  4. 4

Add the chocolate chips and mix again. If adding almonds or cashews, do so now and mix until combined.

  5. 5

Chill for at least 1 hour to cool the cookies (in the picture, we chilled them in the fridge for about 20 hours because we finished mixing at night and baked them the next day).

  6. 6

Preheat the oven to 350°F (180°C) for about 10 minutes, then bake for 10-15 minutes, depending on the size of the cookies and your oven. We baked ours for 12 minutes.

  7. 7

Once done, let them cool on a rack before storing them in a container.
