Vegetarian Lentil Stew with Ginger, Turmeric, and Cilantro 🌿

Today I'm sharing another version of delicious, healthy lentils. The combination of vegetables with turmeric, ginger, and cilantro means you don't need to add any meat.
Let me know if you try them and like them! I made these in my slow cooker for 3 1/2 hours on high, and they turned out perfect without soaking.
I always use brown lentils, which I love because you barely need to plan ahead if you want a bowl of lentils.
If you make them in a regular pot, they'll be ready in about 50 minutes over medium heat. If you use a slow cooker, you'll see that the low-temperature cooking preserves the lentils better and concentrates the flavor.

Prepare all the ingredients. First, cook for a few minutes in a regular pot. Sauté the bell peppers, onion, and grated tomato. Once softened, add the roasted red pepper (chopped), whole unpeeled garlic cloves, and chopped carrots.

Next, add the lentils, chopped potatoes, dissolved bouillon cube, just enough water to cover, salt and pepper, turmeric to taste (I used two teaspoons), a generous bunch of cilantro, and ground ginger (one teaspoon). Mix well.

Transfer to the slow cooker. Set to HIGH for 3 1/2 hours. Stir occasionally, but don't worry—it won't stick. Cook with the lid on the whole time. At the end, taste for salt and adjust if needed.
