Boiled Mutton Curry

It's true that 'old is gold'—food from the past just isn't the same anymore. There's something special about the dishes our grandmothers used to make. Today, I brought back those memories by making mutton in the old-fashioned way. The mutton is boiled and then cooked in roasted spices. It's absolutely delicious and very easy to make.

First, clean and wash the mutton thoroughly. Place a pressure cooker on the stove, add the mutton, and pour in enough water to cover the meat. Add a little salt, turmeric, and some ground garam masala. Close the lid and cook for 2-3 whistles. Once done, turn off the heat. The mutton is now boiled.

Heat another pan on the stove and add oil. Add the whole garam masala mix and whole dried red chilies, and let them sizzle. Add the chopped onions and fry until golden brown. Then add the garlic and ginger paste, 2 chopped green chilies, and onion paste. Sauté on medium heat for 5 minutes.

While the paste is cooking, take a bowl and add the yogurt. Mix in all the powdered spices. Add this yogurt-spice mixture to the sautéed garlic, ginger, and onion paste. Cook everything together, adding a little water as needed, and sauté for about 10 minutes.

Once the masala is cooked and the oil starts to separate, add the boiled mutton along with its water to the masala.

Add the chopped green chilies and some cilantro to the mutton. Simmer on low heat for 10 minutes with the spices. Turn off the heat, cover the pan, and let it rest for 2-3 minutes. Remove the lid and check—the mutton should be perfectly cooked.

Transfer the mutton to a serving bowl. Garnish with chopped cilantro. This old-style boiled mutton curry is ready with very little effort and tastes amazing. Serve hot with roti and share with others.

Note: Adjust the amount of water while cooking the mutton according to your preference.
