Cut the cherry tomatoes in half and place them in a bowl with olive oil, salt, pepper, 1 teaspoon garlic powder, and 2 tablespoons Herbes de Provence. Toss to combine.

In a tart pan, add the balsamic vinegar and brown sugar, spreading them evenly. Place the pan under the broiler for 3 minutes until it forms a caramel.

When the caramel is ready, remove the pan and add the cherry tomatoes. Bake at 375°F (190°C) for 30 minutes.

Once baked, remove the pan from the oven and sprinkle the tomatoes with Parmesan. Let it cool slightly, then place the puff pastry sheet on top. Prick the pastry with a fork and press the edges down. Brush the top with the egg yolk, sprinkle with salt, pepper, and a little Herbes de Provence. Bake at 350°F (180°C) for 20 minutes.

After baking, let it cool for a few minutes, then carefully invert the tarte tatin onto a serving plate. Serve warm!
