Wash the lettuce thoroughly. Peel the cucumber, remove the seeds, and wash it.

Pat the tofu dry and cut into slices about 1/2 inch (1.5 cm) thick. Lightly pan-fry the tofu slices.

Stir-fry the beef with a pinch of salt and pepper.

Dip a rice paper wrapper in water to soften. Place lettuce, tofu (cut lengthwise for easier rolling), cucumber, and beef on the wrapper. Roll tightly.

For the dipping sauce: Mix 1 tablespoon peanut butter, 1 tablespoon hoisin sauce, and 1 tablespoon coconut milk. Heat gently until just simmering, then adjust seasoning to taste. Enjoy!
