In a bowl, mix all the herbs, oil, lemon juice, soy sauce, salt, and pepper. Peel the garlic, chop it very finely, and press it slightly with a knife to make a paste. Mix all these ingredients together and set aside to let the flavors meld. (Depending on your taste, you can add or remove spices and herbs.) The garlic and lemon complement it well!

Take the surimi, thaw it, and carefully unwrap it to cut into long strips. Place them in a bowl and mix well with your fingers so they don't stick together too much. Then pour in all the marinade you prepared earlier, and gently mix with a fork and spoon to coat everything with the marinade. Cover the bowl with plastic wrap and refrigerate for at least one day. The longer it sits, the more flavor it absorbs.

Before serving, mix once more. It pairs well with many dishes. Enjoy!
