Ingredients

6 servings
  • 1turkey thigh
  • 300 gandouille sausage, or full packet of smoked farmer sausage
  • olive oil
  • 1yellow onion
  • 6spring onions
  • 4celery sticks
  • 1green pepper
  • 3garlic cloves
  • 1 candiced tomatoes
  • 2 teaspoonsriracha powder
  • 2 teaspoonpaprika
  • 1 teaspoonoregano
  • 1 teaspoonthyme
  • 2bay leaves
  • 2.5 cupswhite rice
  • 5 cupsturkey stock

    Chop up all of the veggies, and place them in a bowl.

  2. 2

    Chop up turkey and sausage.
    Add to pressure cooker with olive oil and saute to brown the meat.

  3. 3

    Add the veggie bowl to the pressure cooker.
    Saute for 5 more mins.

  4. 4

    Add stock.

  5. 5

    Add all the spices and tomatoes and stir in thoroughly.

  6. 6

    Rinse off uncooked rice, add to pot and do not stir. If too much rice is on the bottom, it'll burn.

  7. 7

    Attach the lid, and cook at pressure for 15 mins.
    Turn stove down to low when pressure is met.

  8. 8

    Turn the stove off, wait approx 20 mins for pressure to drop. Stir well and serve.
