Cut the heads and tails off the fish and remove the innards. Divide into 4 equal pieces.

Add sake and ponzu sauce in a pot and bring to a boil. Lay the fish on the pot, and add ginger, red chili pepper, and ponzu sauce. Cover with a lid and simmer for 10 minutes.

Remove the lid, cover with a drop lid (otoshibuta) and simmer until the broth has evaporated. Then it's done.
