I used to make Maggi in this style during my hostel life. My hubby just loved it. The taste of ginger and the potatoes contribute a lot in the taste of this dish.
Steps

Heat oil and crackle mustard. Using mustard just to control the heat of the oil. Add g-g-g paste and sauté for a few seconds. Add onion and salt. Saute till the onions are translucent.

Add potatoes, carrots, tomatoes and peas. Add 1 sachet Maggi masala, dhanajeera powder, garam masala and chilli powder. Mix well. Add a few tbsp water to allow the spices to cook.

Wait till the oil oozes. Add around 1 ltr or more (a little more than what is required to cook 3 cakes of Maggi as per the instructions on the packet.) Bring it to boil.

Let it boil for 2-3 min. Add Maggi cakes and the rest of the Maggi masala. Cook till the maggi is ready and you get the desired consistency. Ensure that the noodles are cooked well and there is thick soup in much quantity as seen in the pics below.
