I wanted to incorporate the flavors of wild fruits, nuts, and syrups into a juicy well done hen.

Clean Hen thoroughly with cold to slightly warm running water.

Prepare stuffing:

Mix all ingredients into one pile on your cutting board or into a bowl and mix lightly.

Place remaining stuffing into baking dish or very small cake pan. Bake with bird adding to oven about 15 minutes after hen is baking. Apply orange peel strips our any byproducts remaining from any fresh fruit for example bird of tops of strawberries or pineapple skin or any skin to add a fruity flavoring and leave the fruit parts atop the stuffing until fully baked. Remove all fruit byproducts before serving. Rest about 5 min. flip over into cutting board slice in half to serve.

Open the bird at the neck and push stuffing tightly but not so it's packed hard so stuffing pops out just a bit from the other end. Use long toothpicks to thread through the bird so the stuffing remains inside the bird.

Lift skin carefully and push the rub deep over the wings and body so that there is a thickness of the rub. Leave the stuffing part alone and only plush the rub beneath the skin between the poultry and the underside of the skin

Lay orange peel strips or Clementine skins set aside after peeling the fruit. I keep mine in an open pan they dry so fast I never see an insect and I'm from Florida living in the desert.

Set hen aside it refrigerate about 15 minutes to 5 hours.

Bake at 325c 1 hr

Remove hen from oven and pour glaze over the entire hen. Use a brush to brushthe glaze well over the entire hen. This coating will be thick. Be careful to lower oven temperature and watch the glaze go into action because it can burn, but not if you stand there and tidy up or something for the next ten too fifteen minutes. Return to oven about 15 minutes.

Remove from oven and allow to rest at least 15 minutes. Remove stuffing in side fish about the same time.

Cut lengthwise and serve each half separately

Serve alongside slivers of pared apples and mandarin or Clementine orange and a shot of rum. +

If your diet allows brown or wild rice is a great accompaniment with squash and a cold crisp salad.
