Tomyam Fried Rice

Prep all ingredients. Cut, chop & mince.

Heat enough cooking oil in a deep pan. Add beaten eggs and scramble until just set. Push aside. Next sauté shallot, onions & mixed veggies (if using) stir to combine well. Add a tbsp of tomyam paste. Stir again until aromatic.

Add keffir lime leaves & your preferred #protein (diced #chicken/#prawns/#squid/#fishball/#fishcake). Cook until done. Add the rice & toss well with the rest of the ingredients. Cook over high heat. Keep stirring for few minutes (4-5mins) until rice is nicely coated and dried.

Serve with fried egg (or sunny side up egg) and few slices of cucumber
