Summertime Chilled Umeshu and Okra in Jelly For the Star Festival

I wanted to make a drinking appetizer that would go well with umeshu and would be perfect for summer. After many attempts, I came up with this. The subtle flavor of the umeshu really makes this a refreshing and elegant snack.
It tastes best if chilled very well before serving.
The key to making a beautifully set jelly: Fill the ring mold first with the solid ingredients, and chill them well without freezing them. If you wait until the jelly liquid has thickened before pouring it into the mold, you won't fail.
If you don't have a ring mold, you can make the jelly separately, crush it into pieces, mix with the other ingredients and serve.

Cooking Instructions
- 1
Place the jelly mixture ingredients in a heat-proof dish. Let the gelatin soak for about 5 minutes and then microwave at 500W for 30 seconds. Stir it while placed in a bowl of ice water.
- 2
Sprinkle the okra with salt (this salt is not included in the ingredient list) and rub it in. Boil the okra briefly so that they don't get slimy and stay firm. Soak in cold water. Remove the seeds from the tomato. Dice all the ingredients.
- 3
Place a ring mold on a sheet of plastic wrap and use a rubber band to hold the plastic tightly in place around the mold. Fill the mold with the ham and vegetables, and then place the mold in the freezer until the contents are chilled but not frozen.
- 4
Once the jelly has thickened, pour it into the mold. Place into the refrigerator to chill and set.
- 5
When removing from the mold, wrap a warm towel around it to melt the sides of the jelly a bit. It will slide right out.
- 6
In order to prevent the fibers from the towel from getting onto the jello, cover the top with plastic wrap. Gently push and...
- 7
it will slide out I used about 5 okra, 1/2 of a medium sized tomato, 1 packet of powdered gelatin, and 1 slice of thinly sliced ham.
- 8
If you don't have a ring mold, you can use anything you want as a mold. Also, if you want to make the jelly separately and then break it into pieces and add to the vegetables, use 3 g (1 teaspoon) of gelatin.

This recipe goes very well with umeshu.

Sweet Summer Orange and Amazake Jelly Sweet Summer Orange and Amazake Jelly
This is a standard macrobiotic dessert recipe. Our family's version is very easy to make.My husband's parents had given us some summer oranges, and I also had some homemade brown rice amazake, so I made this for the first time in quite a while. Some commercial brown rice amazake is more grainy than others. If the grains bother you, grind them up into a smooth paste in a grinding bowl (mortar and pestle) or a food processor. You can use undiluted apple juice or water instead of orange juice. This is delicious served with diluted maple syrup. Jello with Umeshu and Lemon Jello with Umeshu and Lemon
I enjoy drinking warmed umeshu with lemon juice and honey, and I wondered if it might turn out well as a gelatin dessert, so I came up with this recipe. If you use umeshu that's not so sweet, add more honey. If you prefer a sour taste, add more lemon juice, about 1 1/2 to 2 tablespoons. This recipe makes soft jelly, so if you'd prefer it firm, reduce the amount of water or umeshu by about 50 ml. For 2 or 3 small cups. Recipe by cureo cookpad.japan -

Refreshing and Jelly-Like Ume Plum Jam Refreshing and Jelly-Like Ume Plum Jam
There are many ways to make ume plum jam, such as adding the sugar at the start and simmering the whole plums but if you do that, you may throw out some of the sugar with the stones, and it also makes it harder to pass the jam through a sieve. If you use this method, I think you only need to cook the jam for the minimum amount of time, and you'll also only add the minimal amount of sugar. I simmered the jam 500 g at a time in an enameled pan. This cuts down on the overall cooking time, and I had jam in two colors, which made me happy.Change the water 3 to 4 times for hard green plums, and 2 to 3 times for ripe plums, and they will become tender. Don't bring the water to a boil to prevent the plum skins from ripping. Add 70 to 80% of the weight of the plums in sugar. I think it's best to add more than 350g of sugar for every 500g of green plums. This jam becomes quite stiff when cold. When it changes color after 15 minutes of simmering and becomes thick and limpid, try dropping some of the jam in cold water. If it stiffens up it's done. Recipe by commeline cookpad.japan -
