Special fried rice with curry sauce - UK chip shop style

First thing I always have when I travel to uk. Comfort food :-) now have to make at home as cannot travel. AMAZING nearly 99% same

Ingredients

4 people
  1. 4 portionswhite long grain rice or Jasmin rice. Cooked and cooled
  2. 6eggs
  3. 2 tbspSoy sauce
  4. 3 tbspveg oil
  5. 150 grfrozen garden peas
  6. 150 grlittle prawns
  7. 300 grsteamed chicken breast
  8. 300 grred Chinese pork - see my other recipe
  9. Spring onion
  10. Curry sauce and prawn crackers to serve. (Optional)
  11. 1white onion diced

Cooking Instructions

    In a hot frying pan add the oil and fry the onion until soft but not brown. Add 2 eggs and scrambled

  2. 2

    Remove from the heat and add the rice, soy sauce, cooked prawns and defrosted peas.

  3. 3

    In a bowl or plastic container slice a cooked chicken breast and some red pork. Then fry one more egg like an omelet and fold in half. Put on top.

    Put the rice mixture on top of the egg and slightly press down. Cover then i heat in microwave for 1 min on high - turn upside down on a warmed plate or put in fridge for 2-3 days to eat later.

    Eat with prawn crackers and so Chinese curry sauce (easy to buy at most super markets. Just as water a 1 Tbsp sugar). ENJOY ;-)

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
