I pickled some raisins in very flavorful hon-mirin.

Use hon-mirin for this recipe. You can also use other kinds of dried fruit in this recipe.
I recommend trying it with tart fruit like cranberries.

Ingredients

1 serving
  1. 1Raisins
  2. 1Hon-mirin
  3. 1Lemon juice (or fruit-based vinegar)
  4. 1Ice cream, yogurt, etc.

Cooking Instructions

    Soak the raisins in boiling water, then thoroughly drain off excess water. This will remove the oil coating.

    Transfer the raisins to a sterilized jam jar or other type of jar, fill with hon-mirin so that the mirin is above the level of the raisins, and let sit for a day.

    After a day, the raisins will plump up.

  4. 4

    They taste great on their own, but are great with a splash of lemon juice and fruit vinegar.

    Here, I tried them with kiwi, cheese, and walnuts on toast.

    It's also delicious to add them, syrup and all, to cups of yogurt or ice cream.

    Store in the refrigerator.
