Ingredients

  1. Garam masala
  2. 1/2black cardamom
  3. 1green cardamom
  4. 1 inchcinnamon
  5. 4black peppers
  6. 2cloves
  7. Onion masala
  8. 1medium onion chopped
  9. 2medium tomatoes
  10. 3 clovesgarlic
  11. 1 inchginger
  12. 2dry red Kashmiri chilli
  13. 2 Tbsproasted coconut powder
  14. Masala powder
  15. 1 tsppav-bhaji masala
  16. 1 tspcumin-coriander powder
  17. 1/4 tspturmeric powder
  18. Other ingredients
  19. 1 1/2 cup green gram sprouts
  20. 1small potatoes chopped
  21. 2 Tbspcooking oil
  22. 1 pinchhing
  23. 1/2 tspmustard seeds
  24. Handfulcurry leaves
  25. as per tasteSalt
  26. 1 Tbspjaggery powder
  27. For garnishing
  28. 1Chopped onion
  29. 1Chopped tomatoes
  30. 2Green chilli
  31. As required Wedges of lemon
  32. 1 Tbspgreen coriander
  33. 2 Tbspmixtures with sev
  34. 1 piecehomemade pav

Steps

  1. 1

    Mix the ingredients of garam masala and onion masala and make a paste in grinder.

    Take sprouts in pressure cooker. Add water, turmeric and salt and cook for two whistles. Allow to cool naturally.

    Heat oil in a pan. Add mustard seeds and allow to splutter. Put the curry leaves and saute for some seconds. Add hing powder and saute.

    Now add the masala paste and cook on medium to low flame till the water dries up.

    Add cumin-coriander powder and pav-bhaji masala with 2 Tbsp water and jaggery powder. Cook till oil separated from masala.

    Add the boiled sprouts and adjust water for gravy. Mix well and allow to boil for 5-7 minutes.

    Bring down from flame. Garnish with chopped onion, green coriander, green chilli, chopped tomatoes, lemon wedges, sev mixture and serve with Pav.
