A delicious twist is given to the Kaju Katli by the fusion of Mungfali or peanuts and kaju or cashew nuts. It's taste is rich , nutty and texture is melt in the mouth. Again, it's a beyond easy, quick and protein rich dessert!
Steps

First, slow roast the peanuts till the skin comes off. Take care to not brown them. I did in microwave on 50% power with a 30 second interval and stirring in between. It may take around 5 to 7 minutes. Taste the peanuts and do not let them remain raw. They should be roasted from inside but white from outside.

Then cool and remove their skin. Also clean the cashews with a cloth to remove impurities. Then pulse grind cashews, skinless peanuts and cardamom powder.

Take care to not run mixer on high speed. This will make the nuts release the oil. Only pulse grind and mix with a spoon in between.

Side by side grease ghee on a flat tray and line with butter paper. Keep another sheet of butter paper ready which is greased with ghee. Also keep a rolling pin ready.

Sieve the powder and remove any big particles. Then take a deep based kadhai or pan and make sugar syrup.

For syrup, boil sugar and water in the pan on low flame till a one string consistency is reached. Then add the nut powder and slow cook while stirring continuously.

When the paste is thick, add milk powder and mix well. When it forms a lump like mixture and leaves sides, add ghee, mix well and remove from flame.

Keep mixing for 2 minutes till mixture is cooled a bit. Then pour on the greased tray. Cover with the other sheet. Flatten with hands and roll gently with rolling pin. This process needs to be done quickly so that the mixture does not dry. Add

When you get a disc of one inch thickness, remove the top paper and using a clean and oiled knife, give diamond shape marking on the disc.

When it cools to room temperature, again cut on the marks already made. Then gently remove the Katli pieces and arrange on a tray.
Garnish with cashews and roasted peanuts or as desired and enjoy!
