Comforting Salty-Sweet Simmered Chicken Thighs, Sweet Potato, and Eggs

I had a lot of sweet potatoes, so I wanted use them to make a dish for dinner.
It was so delicious that I even regretted not adding more.
If you love sweet potatoes, use 2.
If you cook sweet potatoes for too long, they will disintegrate. They are ready to eat when they turn a pretty yellow color.
I added sugar because I ran out of honey. You can just use one or the other.

Cooking Instructions

Sprinkle salt, pepper and sake on the chicken, and rub in. Chop the sweet potato into bite-sized pieces, and soak in water.

Pour a small amount of oil in a frying pan, and stir-fry the chicken. When it's lightly browned, add the sweet potato, and continue stir-frying until the sweet potato turns slightly yellow.

Add water, all the flavoring ingredients and boiled eggs, then bring to a boil.

Cover the pan with aluminium foil (right on top of the pan ingredients), and simmer slowly while stirring occasionally.

When the sweet potato is cooked through, it's done.
