There is nothing special to it, but we put konbu seaweed in the pot for extra flavor.

Add anything you like!! Substitute the pork with chicken, or add mushrooms or whatever vegetables to clean up your fridge!

Ingredients

4 servings
  1. 100 gramsJapanese curry roux (store-bought)
  2. 1 literWater
  3. 3 tbspMentsuyu (3x concentrate)
  4. 1sheet Kombu seaweed (about 5 x 5 cm)
  5. Other Ingredients
  6. 1 blockTofu
  7. 1/4Napa cabbage
  8. 300 gramsBean sprouts
  9. 2Japanese leeks
  10. 100 gramsCarrot
  11. 300 gramsPork

Cooking Instructions

  1. 1

    In a pot, soak the konbu seaweed in 1000 ml of water for about 20 minutes. Turn on the heat and bring to a simmer.

    When the water starts to simmer, add the curry base and mentsuyu. Simmer over medium heat and dissolve the curry roux.

  3. 3

    Add the other ingredients starting with the ones that take longer to cook, such as the meat and stalk of the napa cabbage.

    If you add the ingredients gradually as you eat, they won't be over-cooked.
