Ingredients

45 minutes
Serves 4 servings
  • 6 slicesbacon
  • 2.2 poundsbeef steak (such as chuck, which is very juicy), cut into 1/2-inch cubes (about 1x1 cm)
  • 4small tomatillos
  • 2 clovesgarlic
  • Serrano peppers to taste (optional)
  • 1/2 cupchopped onion
  • 1/2onion, left in a large piece
  • 1/4 cupchopped cilantro (about 4 tablespoons)
  • Salt to taste
  • Black pepper to taste
  • 1 pinchoregano
  • 1 cupwater (240 ml)
  • Worcestershire sauce to taste
  • 1 1/2 cupscooked pinto beans (frijoles de la olla)
  • 1 cupbean broth (optional)

    1. Chop the onion, cilantro, and bacon.

    2. Cook the bacon in a skillet until crispy and all the fat is rendered. Remove and set aside.

    3. In the same skillet (you can remove excess fat if desired), sauté one clove of garlic, add the beef, Worcestershire sauce, salt, and pepper. Cover and cook slowly so the meat releases its juices.

    4. Blend the tomatillos, serrano peppers, the other garlic clove, the large piece of onion, and water. Add this mixture to the beef.

    5. Add the beans and their broth at the end. Bring to a boil again.

    6. Serve topped with chopped onion, cilantro, and crispy bacon.
