Ingredients

  1. 6small red potatoes boiled until soft in chicken broth
  2. 4 Tbspgarlic flavored olive oil
  3. 2 Tbspgrated parmesan cheese
  4. 1-2 Tbspbacon fat (or substitute with butter or duck fat)
  5. Fresh herbs of your choice. I used parsley and thyme
  6. to taste Salt and pepper

    Set oven to 450°F. Line a pan with foil and drizzle half of the garlic olive oil over the foil. Place the 6 potatoes in the pan and using a potato masher or a cup push down on each potato to smash it down and open. Brush the remaining garlic oil over the potatoes. Season potatoes with salt and pepper. Drizzle the bacon fat over the potatoes. Sprinkle the herbs and Parmesan cheese over the potatoes. Place the pan in the oven and cook for 20-30 minutes or until the potatoes start browning.

    When done remove from oven and plate. Serve and enjoy. (Note: we usually serve with chopped green onions sprinkled on top but we were out when I made this)

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
