This is a recipe I learned from my mother.

- Adjust the soy sauce and sugar to taste.
- The more bonito flakes you add, the better it tastes.
- You can also make this with dashi stock granules.
- You could make the dashi stock with granulated kombu based dashi mixed with granulated dashi stock. Recipe by Yuuyuu0221

Ingredients

  1. 500 mlDashi stock (kombu, bonito flake based)
  2. 3 tbspSoy sauce
  3. 2 tbspMirin
  4. 1 tbspplus Sugar
  5. 1/2 tspSalt

Steps

  1. 1

    Make the dashi stock. Add the mirin to the dashi stock and bring to a boil. Add the soy sauce, sugar, and salt, return to a boil, then remove from heat.

  2. 2

    Tip: If you're used to store-bought mentsuyu, this might taste a little weak. Add condiments or teriyaki eggplant to make it more delicious.
