Upma is a flavorful South Indian breakfast dish made from rava or cream of wheat. The main ingredient in any upma recipe is rava. Also called ‘suji‘ in Hindi and ‘cream of wheat’ or ‘semolina’ in English, it is simply granulated wheat.
This traditional dish involves cooking roasted rava in water that has been flavored by ghee (or oil), cashews, urad dal (lentils), chana dal (husked chickpeas), onion, ginger and additional herbs and spices. Sugar can be added for a mildly sweet and savory dish.

Ingredients

  1. 1/2 cupSemolina
  2. 1/3 cupcashew nuts
  3. 1/3 cuppeanut seeds
  4. Oil as per required
  5. 1 tspmustard seeds
  6. 1 tspchickpea lentils
  7. 1 tspurad lentils
  8. 2finely chopped green chilly
  9. 1whole dry red chilly
  10. 6-8sweet curry leaves
  11. 1midium size finely chopped onion
  12. 1midium size finely chopped carrot
  13. 1midium size finely chopped green capsicum
  14. 1/2 cup boiled green peas
  15. 1 tspgrated ginger
  16. Salt as per taste
  17. 1.5 cupwater
  18. 2 tspsugar
  19. 1 tsplemon juice
  20. 1/2 cupfinely chopped tomatoes
  21. 1/3 cupfinely chopped green coriander leaves
  22. 👉 For Garnishing :--
  23. leavesFinely chopped green coriander
  24. Roasted cashew nuts
  25. Roasted peanut seeds

Cooking Instructions

    First dry roast the semolina in a pan on medium flame for 2 to 3 minutes. Then add 3 tbsp oil to the pan and deep fry the cashews and peanuts.

    Now heat 2 tbsp oil in a pan and add mustard seeds, chickpea lentils, urad lentils, green chillies, dried red chillies and sweet curry leaves.

    Then add onion, capsicum and carrot and mix well. Simmer on medium gas flame till the color of onion changes.

    Then add green peas, grated ginger, fried cashews and fried peanuts, mix well and let it cook for 2 to 3 minutes.

    Now add this water, raise the gas flame, add salt, sugar, lemon juice and tomato to taste and mix well.

    Then add this semolina little by little and mix it. Now add coriander leaves and mix. Let it cook on the flame for 1 to 1/2 minutes.

    Now Vegetable Upma is ready to serve. Garnish with coriander leaves, cashews nuts and peanuts.
