Vegetable Rava Upma, absolutely simple and wholesome recipe loaded with vegetables makes a great start to your mornings. It is traditional South Indian breakfast made from semolina/rava cooked in seasoning and vegetables.

There are lot of variations that can be done to the dish with the addition of ingredients. Tomatoes can be added as an alternative instead of vegetables to make it Tomato Upma. Tomatoes add a zing to the palate and tastes delicious too. In vegetable Upma, lemon juice is used to add the zing without changing the color of Upma.

Serve Vegetable Rava Upma along with coconut chutney and filter coffee for a wholesome South Indian breakfast.

Ingredients

30 minutes
4 persons
  1. 4 tbspoil
  2. 1/2 tspmustard
  3. 1 tbspChana dal
  4. 1/2 tspurad dal
  5. 10cashews, broken
  6. 1medium-size onion, sliced
  7. 4green chili, slit
  8. 1 sprigcurry leaves
  9. 1/2 inchginger, crushed
  10. 1/4 cupbeans, chopped
  11. 1/4 cupcarrot, chopped
  12. 1/4 cupgreen peas, frozen
  13. 1 cuproasted rava
  14. 2 tbspgrated coconut
  15. 1/2lemon
  16. as requiredFew coriander
  17. 1 tspghee
  18. as per tasteSalt

Cooking Instructions

    In a pan heat oil and splitter mustard. Add in Chana dal, urad dal and fry. Add in cashew nut and fry until dal and nuts are golden and crispy.

    Add in crushed ginger and sauté until aromatic. Add in mixed veggies and sauté for few minutes.

    Add in 3 cups water, salt and let it come to a boil. Check for seasoning, water should be little salty.

    Reduce the flame to low and add in roasted rava gradually while continuously stirring to avoid lumps. On low flame, cover and let it cook for few minutes until rava is well cooked.

    Add in grated coconut, ghee lemon juice, coriander leaves and mix it. Switch off the flame, cover and let it stand for 5 minutes before serving.

    Vegetable Upma is ready to be served.
