This sandwich is called Coronation Chicken and was born in England. 5 to 6 years ago I was invited to the house of an English friend in Cornwall to do some diving, and her mother made this for me. I learned the recipe from her and have since adapted it to this version.

Bring the white wine to a boil to get rid of the alcohol.
You can use any kind of dried fruits, finely chopped.
This is great as a sandwich filling, but you can use it on salads too.
If you make it in the evening before you go to bed, you sandwich it between slices of bread in the evening for a quick meal, so it's very convenient. Recipe by Plabar

Ingredients

  1. 2Chicken breast
  2. 1 smallOnion
  3. 2 tbspRaisins
  4. 1 tbspCurry powder
  5. 1 tbspTomato puree
  6. 1/4Lemon
  7. 100 mlWhite wine
  8. 1Lettuce
  9. 1Salt and pepper
  10. 3 tbspMayonnaise
  11. 2 tbspHoney
  12. 75 mlHeavy cream
  13. 1 tspVegetable oil

Cooking Instructions

    Chop the onion finely. Cut the chicken into bite sized pieces and season with salt and pepper. Soak the raisins (or other dried fruit) in water.

    Cook the chicken in a non-stick frying pan without any oil until it's cooked through. When it's cooked transfer to a plate and let cool.

    Heat some oil in a frying pan and saute the onion until softened.

  4. 4

    Add the curry powder, tomato puree, lemon juice and drained raisins and mix.

  5. 5

    Add the white wine and let the sauce come to a boil to evaporate the alcohol.

    When the sauce has come together, add the mayonnaise, cream and honey and stir over low heat.

    When it's all mixed together well, turn off the heat. Taste and see how sweet it is. It should be just subtly sweet.

    Add the cooked chicken from Step 2 and mix well. Season with salt and taste.

    When it's all mixed together well like this, leave overnight to cool. It's also good eaten warm.

    After letting it cool overnight, put it on bread to make a sandwich. Satisfy both your tummy and tastebuds by packing it into your bento too!
