Ingredients

  • Dressing
  • 125 mlplain Yogurt
  • 7,5 mlDijon Mustard
  • 15 mlSambal Oelek, or other Asian Chilli sauce
  • 1/2Lemon, juiced
  • 30 mlrice Vinegar
  • 15 mlvegetable Oil
  • 10 mlSyrup, from canned Peaches
  • Salt to taste
  • 1 pinchCayenne Pepper
  • Coleslaw
  • 1/2Cabbage, thinly sliced
  • 1 canPeach slices in syrup
  • 15 mlfresh Chives, thinly sliced

Steps

  1. 1

    Whisk Yogurt, Mustard, Shambala Oelek, Lemon Juice, Vinegar, Oil, Syrup, Salt and Pepper in a bowl until smooth.

    Place Cabbage, Peaches and Chives in a large bowl and cover with dressing

    Mix through the Coleslaw and the dressing till well combined. Cover with plastic wrap and chill for at least 30 minutes for flavours to combine and Cabbage to soften slightly.
