Ingredients

  1. Base
  2. 1 1/3 cupsflour
  3. 1/2 tspbaking powder
  4. 1/4 tspsalt
  5. 1/2 cupshortening
  6. 1egg, slightly beaten
  7. 1/3 cupsugar
  8. Topping
  9. 1 1/2 cupsbrown sugar
  10. 2 tbspflour
  11. 1 tspbaking powder
  12. 1/4 tspsalt
  13. 2eggs
  14. 1/2 tspvanilla
  15. 1/2 cupcoconut
  16. 1/2 cupchopped walnuts
  17. 1/4 cupraspberry jam

Steps

20-25 minutes
  1. 1

    Preheat the oven to 425 F. Mix flour, baking powder and salt together with an electric mixer at 5. Next, mix in the shortening until mixture is crumbly. Add egg and mix in till well blended.

    Grease a 9 by 9 inch pan. Pat the mixture into the pan and bake for 10 minutes. Remove from the oven and reduce heat to 350.

  3. 3

    Combine brown sugar, flour, baking powder and salt. Beat in eggs. Then stir in the brown sugar mixture, vanilla, coconut and nuts. Spread the raspberry jam over the partially baked base. Then add the brown sugar coconut mixture on top. Spread it evenly. Then bake at 350 for 20-25 minutes. Cut bars when cold.

All my recipes can be made gluten free if you just use gluten free flour except for a few but I will say that they aren’t able to be GF.😁😜
