When I helped to make pork soup for our local town's marathon, I saw elderly ladies adding sugar to the soup and I tried it out.

The mysterious ingredient is sugar! Sugar makes the soup richer and tastier! Pork becomes tender and other ingredients are cooked more quickly. Recipe by Poyopoyon

Heat sesame oil in a pan and fry the pork. Add sugar when the pork is almost cooked and continue to fry.

  3. 3

Add and fry the rest of the ingredients and add the dashi stock (I always use dashi powder). Cook until everything is tender.

After the ingredients are cooked through, add the miso. Grated ginger will warm you up and ichimi spice will add a bit of spice to the soup.
