Soups are always nutritious, be it cold or hot. Filling, one pot and tasty for sure be it vegetarian or non vegetarian. I made Spinach & Rice Soup for lunch today
Steps

Wash the spinach and add to a bowl with the water level just touching the leaves, boil with salt and drain but reserve 1/2 cup of the liquid

Chop the spinach fine and set aside

In a wok heat olive oil, add sliced onions, sliced red chillies and minced and chopped garlic, on medium flame cook to soften.

Add Arborio rice and coat well. Add broth and on high flame bring it to boil. Add salt and reduce the flame to simmer for 10 mins

Add spinach boiled water reserved earlier and add the chopped spinach. check seasoning. Add pepper.

Simmer for 5-6 mins. Set aside

Plate and add best quality Parmesan cheese you have which would be sliced fine. Enjoy a nutritious soup
