Hot Pear Gratin Dessert

For a cold winter day's dinner, I wanted to make a dessert with my pear compote.
It will be easier to whip using a handheld mixer.
The sauce is sour because of the lemon juice. Please adjust the amount of lemon to your taste. Recipe by Usagi no Cima

For a cold winter day's dinner, I wanted to make a dessert with my pear compote.

Cut the pears from the compote in half lengthwise. Preheat the oven to 200°C.

Put the egg yolks and granulated sugar in a bowl over hot water, and whip until thickened. Add the rum and lemon juice.

Line the ramekin with the sliced pears, and pour in the egg mixture. Bake in the oven for 10 minutes, until the surface browns.

When it's done, the surface becomes like a soufflé, with a nice golden brown color.

Enjoy it right out of the oven with a spoon and the sweet-tart sauce will ooze out!

I adjusted the lemon juice to the amount of 1/2 to 1 tablespoon on 2011.10.11. If you don't like it too sour, please use a 1/2 tablespoon of lemon juice.
