Potato, Avocado & Soy Milk Gratin

I needed a way to use up and over-ripe avocado, so I used it to make sauce for gratin.
If avocado is heated it won't become brown even after cutting, so you can prepare the sauce in advance if you like. Take care not to overcook the avocado or else it will become bitter. Recipe by da mama

Cooking Instructions

Wash the new potatoes, and boil with the skins. Cut the onion into 5 mm thick slices, and cut the bacon (or ham) into 1 cm strips.

Peel the avocado and remove the pit. Cut into bite-sized pieces (don't worry if they crumble slightly).

Heat some olive oil in a saucepan and stir-fry the onion, then add the bacon and continue to cook.

When the onion and bacon have cooked through, add the avocado. Gradually add the soy milk, breaking up the avocado with a wooden spatula as you go.

Season with salt and pepper. When the mixture comes to a boil, turn off the heat.

Cut the boiled new potatoes into 5 mm thick slices. Line the bottom of a gratin dish with the sliced potatoes, and pour over the Step 5 sauce.

Sprinkle some grated cheese on top and grill until the cheese is golden brown.
