Toast freshly ground black pepper in a large skillet, then add 1 2/3 cups water (400 ml) and the spaghetti.

Cover and cook, stirring often, until the spaghetti is done and has released all its starch into the pan.

Separately, grate the cheeses and mix them with milk or water to make a thick cream. Let the pan cool slightly, then add the cheese mixture and stir vigorously with the pasta. Add more water if needed.

Serve with extra black pepper on top.
