Ingredients

20min +10 min
12-14 pieces
  1. 2 cupsgram flour (besan)
  2. 1 cupsorted,. washed and finely chopped coriander leaves
  3. 1 inchginger
  4. 3green chillies (adjust accordingly)
  5. 1 tspasafoetida (hing)
  6. Salt to taste
  7. 1/2 cupwater
  8. 1 tspturmeric powder
  9. 1 tspsesame seeds
  10. Oil for deep frying

Steps

    In a deep mixing bowl add besan and chopped coriander leaves. Mix them well. Now add ginger chili paste (grind together ginger and chill in a pestle and mortar), asafoetida, salt, turmeric powder, sesame seeds and mix well. The mixture will look soggy.

    Now add water to make a cake batter like consistency.

  3. 3

    Take a non-stick pan. Pour this batter and cook on a medium low flame. Mix continuously. Do not stop mixing until the batter thickens and combines together and is like a dough like in texture. Put off the flame.

    Grease a thali with oil. Drop this mixture on it and spread evenly. Just like we make barfi.

  5. 5

    Let the mixture cool to room temperature. Cut into desired shape and pieces. You can have them like this as well.

  6. 6

    Now heat oil in a kadhai. Once the oil is hot, drop the kothambir Vadi in a hot oil and cook unti it turns a little crispier and golden in colour.

    Serve with chutney of your choice or tomato ketchup.
