Cooking Instructions

Remove the skin from the chicken breasts, and cut into bite-sized pieces. Marinate with sake (not listed) for about 30 minutes.

Add all the ◎ ingredients and onion to a frying-pan, and simmer for about 3 - 5 minutes over a low heat.

When the onion changes colour slightly, add the chicken breasts, and continue simmering for another 5 - 10 minutes over low heat.

When the chicken is cooked through, pour in the beaten eggs from the side of the pan, and stir slowly.

Put the rice in a bowl, add the chicken and egg on top, and it's done!

I got to this recipe through trial and error.Beat the egg as if you are cutting through the white sections.My husband likes things flavored on the sweet side so I put some sugar in, but it's delicious without sugar too. I've been making oyako don this way forever. By stir-frying the ingredients, I think it comes out tasting a lot richer.Brown the chicken thigh meat, onion and Japanese leek on on surface. They'll be simmered later so there's no need to cook them through at that point.If you don't have any honey, use sugar or sugar syrup instead.Try not to beat the egg too much.
