Poori- aloo curry and kheer

(Steps for making poori)
In a parath, take wheat flour, salt, sooji and mix.
Add oil and mix.
Next gradually add water and knead a semi soft dough.
Cover and keep aside for resting.
Upon resting the dough will become softer. - 2
Meanwhile prepare the masala paste with the above-mentioned ingredients.
Next place a kadhai. Heat oil. Splutter cumin seeds. Add a dash of hing.
Next put the prepared masala paste. - 3
Cook the masala paste till it leaves oil.
Next add the diced boiled potatoes and little water.
Mix. Let it be on slow flame for some time.
Next add salt as needed and sugar. Mix. Flame must be medium.
As the flavours combine well with each other, put garam masala.
Give a mix.
Put finely chopped coriander leaves and mix. - 4
Cook till the required consistency.

It's ready... serve hot with poori.
For poori...
Take the rested dough, knead it once again. Divide into small portions.
On a rolling board, place the portion and roll it.
Side by side heat oil. Put pooris for frying at medium to high heat.
When done... strain...
Serve hot hot with aloo curry and kheer...
It's superb breakfast or can be a brunch too..
Tips

Frying poori made your oil dirty? Not anymore
When you are rolling out pooris, do not dust dry atta on the rolling board instead brush little oil and roll out your pooris.. The shape may go little haywire but frying those pooris will not make your oil dirty.

Want to have a puffed poori?
Keep the oil medium hot. Put poori into it and splash oil...but carefully... your poori will puff up..
