When it's cold and you get to eat hot vegetable biryani, the enjoyment of eating doubles. Kids love it, and it's a favorite for everyone. Biryani made with soya chunks is also healthy because you can add any vegetables you want to eat. Kids who usually don't eat vegetables enjoy them with rice.

Ingredients

Half an hour
Serves 6 servings
  1. 2 cupsbasmati rice
  2. 1 cupsoya chunks
  3. 1carrot
  4. 1bell pepper
  5. 1 tablespoonchopped green onions
  6. 2large onions
  7. 2tomatoes
  8. 1 teaspoonginger paste
  9. 1 teaspoondried fenugreek leaves
  10. 1/2 teaspoongaram masala
  11. 1 teaspooncoriander seeds
  12. 1 teaspooncumin seeds
  13. Salt to taste
  14. 1 tablespoonoil for tempering
  15. 2crushed black cardamom pods

Cooking Instructions

    Wash the rice and soak it in 4 cups of water. Soak the soya chunks in hot water. Wash and finely chop all the vegetables.

    Heat oil in a pan and add cumin seeds. Let them crackle. Add onions and ginger. Sauté lightly. Add bell pepper and carrot, and sauté lightly.

    Add salt, coriander powder, dried fenugreek leaves, garam masala, and soya chunks. Cover and cook until the vegetables are tender.

    Finally, add tomatoes and mix with the vegetables. Add tomatoes at the end so that all the vegetables cook well.

    Add all the rice along with the water, cover the pan with a lid, and cook until the rice is done.

    Hot soya chunks biryani is ready to eat.

    Serve on a plate with tangy cilantro chutney, or you can enjoy it with pickles, papad, or yogurt.

    This biryani tastes great with everything, and adding a little ghee on top makes it even more delicious.
