Heat ghee in a Kadai, add cashew nuts cook till it's little brown in colour, then add raisins cook for a few seconds then add one by one cinnamon stick, cardamoms, star anise, cloves, bay leaf cook till fragrance comes out then add washed and soaked rice.

Stir the rice for 2- 3 minutes. Then add water boil it, add salt to taste, and add half of masala powder, mix well, cover, and cook it on low flame.

After five minutes add jaggery and leftover masala powder, mix well.

When rice is cooked at 80%, add basil leaves and nutmeg powder, cover, and cook well. Serve with chicken curry.
